Ultra-pasteurized milk is an industry slang, and the outer packaging of products is generally marked high-temperature sterilized milk. From a market perspective, ultra-pasteurized milk has a longer shelf life and a wider sales radius than traditional pasteurized milk, and has become a weapon for some dairy companies to occupy a position in the low-temperature milk market. The High-temperature Sterilized Milk standard issued by China clearly states that high-temperature sterilized milk refers to a liquid product made from a single variety of raw milk through high-temperature sterilization and other production processes. Compared with traditional pasteurized milk and ultra-high temperature sterilized milk, the difference between high-temperature sterilized milk lies mainly in the sterilization process and evaluation standards. High-temperature sterilization refers to a thermal sterilization operation that produces chemical, physical and sensory changes that are higher than pasteurization but lower than the degree of sterilization while effectively killing pathogenic microorganisms. The specific requirements are to maintain the sterilization temperature at 115 for 20 seconds, or 12 0, 15 seconds, 130, 2 seconds. The equivalence evaluation requires that the alkaline phosphatase detection value is negative and the furosine is not higher than 100mg/100g protein. Ultra-pasteurized milk is the same as traditional pasteurized milk. It only has raw milk in the ingredient list and needs to be refrigerated. The difference is that the shelf life of ultra-pasteurized milk can reach 14 days to 30 days. The shelf life can even be extended to 45 days to 60 days under the American ESL high-temperature sterilization process, while the shelf life of traditional pasteurized milk usually does not exceed 7 days. Ultra-pasteurized milk has no technological innovation in essence, but its greatest contribution is that it has moved one step further from ambient temperature milk to better quality, bringing more dairy consumption into the trend of low temperature. Abroad, ultra-pasteurized milk is similar to extended shelf life (ESL) milk. It has a longer refrigerated shelf life than traditional pasteurized milk, usually 21-45 days, some claim up to 90 days. This is achieved through thermal processing or non-thermal methods such as microfiltration, often combined with pasteurization. Compared to UHT milk, which has a longer shelf life but can undergo more thermal processing, ESL milk retains a fresher taste and nutritional content.
